This is one of the bags that was in the fridge! I noticed that it was "puffed up" and this bag had the air "vacuumed" out of it and sealed...Now, remember your school days in science when you learned about the "Perri dishes" that even in the fridge "breakdown" and virus will grow!...Well, What I think (and know) is that the gases that the potato gives off is probably what causes that bag to swell up. I opened the bag from the fridge..there was no smell ( no smell in natural gas either)..there was no mold, but they did look as if there was liquid drainage..so I put them into a strainer to rinse them with cold water Then dry them off with a paper towel before
cooking them in the deep fryer..I didn't like the amount of oil they seemed to hold,so I put them under the broiler to finish cooking. That eliminated some of the oil..not as much as I would have liked...next time I'll try just oiling them and cooking them in the oven.
After the cooking they weren't bad at all. I sprinkled a little salt over them to bring out the sweetness of the potato.
The bags in the freezer also had "puffed up",I won't worry about that..I'll just do as I always do with the ones I buy at the store..Only thing they cost me more..and these were a sale I enjoy each time I open a bag :o).
By the way here is a picture of the "New Year's Feast Leftovers"...Black Beans and Rice, Candied Sweet potatoes,Broccoli leaves and florets, corn bread and "Trotters" some of you know as "Pig feet"..

I think I'm more of a Southerner than some of them that I've met :o)..In my lifetime I have had many ethnic influences of food and I go with each flow..only thing I've found I'm allergic to is mango's...I;m a survivor :o)

ReplyDeleteI'm probably the first person you've met that admitted to eating Pig feet :o) sometimes People play "social games" ..No , they weren't pickled..they were simmered for hours in tomato sauce with onions, garlic,peppers and whatever seasoning I decide to throw in :o) They are delicious when cooked until they fall off the bone:o)

That meal looks delicious. Belle's mom is from Florida. We missed her traditional black eyed peas this year.

Is it that you have never tried frying SP or saved them like that? Either way, don't miss out on them when they are up for sale in Nov :o) the Pig Feet were almost the best of all :o)

ReplyDeleteyou have got to be a young un :o) Next shopping trip buy yourself a couple ( better make that four :o) bake them with the skins on (washed, oiled, wrapped in tin foil about 45 minutes to 1 hour, they will feel tender thrugh the foil when pressed to know when they are done) Or Peel them slice them like french fries boil them in hot oil or sprinkle them with oil and put in the oven..sprinkle salt on them when they are done. Enjoy!
I slice them, put them in a big bowl and drizzle a little olive oil over them, then sprinkle on some Mrs. Dash and toss till they are covered in oil and spice. I cook them on a cookie sheet. Yumm
