Drying Tomatoes


I'm very pleased with the way the tomatoes dried..they were pretty when I sliced them and stayed that way during the drying process!
I think I'm going to run out of freezer space ..so I thought I'd better try drying so that when it's Soup time..I can grab a handful to put with my "Stock" :o) I've already dryed some "Scallions" :o) (I'm just showing off here!  I read somewhere that dried tomatoes are $10 a pound! If thats a fact...I'll be doing some drying daily..I use a lot of tomatoes...
The banana's didn't do too well at all! :o(...first of all I thought they were too soft to begin with...but hard hearted hannah (me) had to try it anyway!...next time I'll know better! so I didn't completely lose out! I think a more firmer ripe one will work out fine...We love to nibble on something sweet..

  1. Wow...what a great idea..My Daughter loves the dried Bananas but I never tried to do that myself. Do you have a dehydrator or did you do them in the oven..I would love to know..maybe you can post and let us know how you did it :)

Hi Nancy, Yes I have a dehydrator...all I did with the tomatoes was .slice them (about a 1/4 inch thick) and lay them out in the trays ...dehydrator on 145 and went to sleep...this morning they were good and dry and beautiful...The banana's were too soft to begin with.The birds will be enjoying those..Ginny

Daisy they really did ...I'm going to dry more of them , it will save freezer space..unless I decide to put more of them in jars..they don't go bad there :o)..There is another dish I make ..Cecil's sister's recipe for tomato with bits of bread...it's a country dish that's delicious..we love that one too! Ginny

  6. I sure have learned a lot from you, Miss Ginny. We are going to have a whole lot of tomatoes all ripe at the same time in a couple of weeks. Perhaps I will try drying some of the ones we can't use instead of giving them all away.

  7. Ladydi, it's nice to share and tomatoes this year is a real gift..to anybody...get busy..saving them...you can just wash quarter (take the top core out) and throw in a freezer bag or the new plastic freezer containers...you won't be sorry..when it's time for a nice bowl of soup.
    Ginny...who tries to be frugal :o)
