Pickled Eggs with Beets and Onions :o)


Today is a dreary but happy day to finally get a lot of rain for the newly planted Fall Garden :o) and to also taste the pickled eggs that were done on Sept. 4th..now they are finally ready to eat and they are delicious (even the beets and onions have a good taste  :o) I also think they are a beautiful color :o)
Since it's raining and I had a full day at the Doctor's yesterday with one test after another, which most of you know tires one out , I need to just get some rest so for today....My aim is to do NOTHING!...

  1. Good, you deserve a day of doing nothing. I've had pickled beets but never eggs, but they look delish! Enjoy both the meal and your day off.

  2. I don't think I have ever had pickled eggs which is strange because i love eggs and anything pickled..lol Make sure you really do nothing to day!

  6. Daisy, I agree that I deserve a day off..and I'm taking it.the eggs are as tasty as they look.I'm so glad I decided to make them..I have another recipe for something pickled if I can find the main source :o)

    Mama bug..the eggs do look pretty in person..the beets turn the egg whites into that shade of purple, and I think it helps to darken the egg yolk (or the vinegar does it).

  7. I know how much I enjoy seeing my favorite patients at the medical office where I work, and I'm sure the staff where you went are delighted when Miss Ginny comes to call. Lucky them!

  8. Ladydi, the "Office" these days are so not personable
    like in the old days..the "assistants" are changed so quickly that by the time of the next visit there is someone new. Glad the Dr remembers :o)
