UPDATE:from 11/18/10 Sweet Potatoes now Canned :o)

Nineteen jars later :o) + one that didn't seal :o( that one will become a pie today, which will make Cecil very happy.
I still have some on the Patio, peeled and in Lemon Water. I will make some Candie Potatoes for the freezer today after I purchase some tins..and purchase more sweet potatoes to have on hand while the sale is on...Also Sweet Potatoes are supposed to be good for Diabetics :o)  (those are  the best excuses I could come up with to buy more.:o)
If you do a close up, you will notice that the jars with the label are the first batch I did , I boiled them and then peeled, jarred,and added hot water> I didn't like they way they had to be handled. They were hot,and became mushy when put into the jar. Although the jar was fully packed after canning,I can only make pies, cakes and another whipped potatoes recipe. So I did the second batch My way I peeled them, cut them up in large pieces (chunks) , jarred them, added the boiling water and pressure cooked  10  lbs pressure for 1 1/2 hours. To me they came out pretty neat..I can make candied yams, sweet potato pies, Cakes or whipped potatoes, whichever I choose. Maybe I'll bake a few the weekend :o) Sounds to me Potatoes are like a Chicken, you cook  them in many ways.

  2. Ginny, those look so nice! You did a lot of work today. Sweet potatoes ARE supposed to be good for you and now is the best time to get them. I think you were wise to buy more. There are so many delicious ways to fix them, yes. Have a good weekend! :-)

  3. Ginny those potatoes look great. I'm with you on the way to put them up. They are better putting them in the jars raw and letting the canner cook them. The first one's I put up were too soft to do much with.

  5. Mama-Bug, I told you once "great minds think alike" ;o)
    I felt good after I saw the results, they even looked better. The ones that look like mush will make great pies or Potato fluff (ingrediants same as pie without the shell so they are still good and no lost. Ginny

  7. I'm cooking some sweet potatoes today, Ginny, but nowhere in these amounts - just for a Sunday dinner with friends. Yours look wonderful. We have a pressure canner and did some canning last year for butternut squash. I'm not sure whether or not Grenville cooked it first or let the pressure cooker do the work, which sounds like a smarter and easier way.

  8. Beatrice, I did squash both ways this year, one with hot water bath and one with pressure. The one with the raw hot water looked the best! The one with the pressure cooker raw looked darker and older. I think once they are really sealed and no air can get in they would be fine...of course you have to reach a temperature that would kill an organism..they are going to be fried or re-cooked most times anyway.
