Well Ladies, Sweet potatoes are on sale today and I've been waiting for them. I knew they would drop from $.99 lb. to about $.25 lb. for the Holidays and I'm taking advantage of it. They have been doing that here for a few of years...I have about 10 lbs in the Canner already :o), but I didn't like the way the process went..The book says wash, boil, and then peel, but by that time the potatoes are too hot and mushy to handle..you can't go sticking holes in them every minute..so I'm going with my own method. I've washed the rest of 30 lbs. Peeled them and have them sitting in water with some Lemon juice to help them keep from turning brown. Tomorrow I'll cut them up, jar them, add boiling water, and pressure cook them @ 10 lbs pressure for 1 1/2 hrs. < That will be sufficent to cook them enough. If I'm not too tired I may buy more and make a couple of tins of Candied Yams and freeze them for "Company Time" the others I can use different ways.
By Morning I will have decided how I'm
going to cut these, I'm not sure if I want to
slice them thick, or dice them thick, Right
now I'm tired and I need to think clearly. I'm just happy that I was able to get them the first day before they were all picked over. I think Cecil did a good job selecting sizes too, it was easier for me to peel. Lets see what tomorrow brings...
Oh they look good, Ginny! You're making me hungry for sweet potatoes. You got a great deal on them too!

ReplyDeleteYou are right, GInny, that the sweet potato prices drop around this time. They were 29 cents/lb here for locally grown ones so you got a better bargain. These are my favorite potato and I've been thinking about trying a pie this year. Last week I cooked a couple and added butternut squash - delicious :-)
ReplyDeleteI agree with Daisy- they sure do look yummy, Miss Ginny! I love a sweet potato fixed pretty much any kind of way. It's hard to find good ones around here this year- for some reason they are all so small.
ReplyDeleteBeatrice, I had to pay $29. also, Last year they were $.25, I could have gotten them for $.27 but it would have cost me more in gas to travel the distance and $.27was closer to home :o) I'm satisfied. I've been working with them all day..I started last night and just took my time..and I'll show results when I'm done.

Paula, this was a bad year for a lot of things growing. I had some beautiful Butternut squash growing from seeds I had saved..they got to the prettiest blooms you would ever see...and that was it...nothing came of them and we don't know why! We added some 10-10-10 to that area and planted some Mixed greens...well the mixed greens have yielded a great harvest. Maybe the bees not being around this year was the cause of the poor Butternut Squash...we will try again next year.

Root and Twig, that was a lot of peeling, but it's quite easy with my tool, it just takes the skin off pretty quick and my knife is sharp to chop...The rest goes into the food processer to slice and shred.It's a wonderful utencil to have. Ginny
