Did I say I was finished Canning?

If I recall, I said "I think" ;o)  I just can't help it y'all. I went to Walmart's and what did I see but a 10 bag of
Russet Potatoes for $2.
Being my mothers child, I couldn't resist the bargain, that's like  a $1. for 5 lbs. so I bought a bag to make me feel good that I didn't miss a bargain. Well after processing them, and letting Cecil give them a taste test (just about a pound). I bought another bag today :o) .As you see I first peeled them and then sliced them up about 1/2 inch thick...laid them on my trays and baked them..didn't take any time at all to cool, then me and Penny ( Jilly won the contest by default :o) managed to get the air out and I learned how to operate Penny a little better. I got about 12 meals, all ready to use any way I like.
I'm really falling in love with "Penny" and glad the company made it easy for me to have the other one exchanged. Idea's are running away with me...I like to put food away, Cecil loves going to the store, I don't. So I can plan meals and not waste. Most folks are on a budget with the economy the way it is...but for some of us, it's a natural thing to SAVE.
My mother used to say she could live on what Cecil and I threw away < those times are long gone. Now I say that to my kids. Wonder will they be saying the same to theirs :o).

That's actually pretty neat, I would never have thought to do up potatoes in that manner. Very nice.:)

Ginny, those potatoes look great. You are just saving money and extra trips to the store left and right. Those will make for some quick and easy meals later on. :-)

Mr H. Don't tell me that! I'm already thinking I'm a smart cookie today! I don't have a root cellar so I have to do things the best way I can.Hubby would never let me dig a tunnel anyway :o)...

Daisy, I was some surprised at how easy it was and how great the advantage it makes...My freezer is getting smaller :o)..I've already run out of jars :o(

Ginny, looks like you and I are never through putting up food! As long as there are bargains I'm putting them up! I put homemade chicken broth up in the freezer last night. Happy New year dear friend and hope God blesses you lots in the coming new year.

Mama Bug, good thing we like to "put up food":o). I love a bargain! Saving on food is one way to get the budget going strong. I ran out of jars, otherwise I'd release the frezzer of some tomatoes etc. I made chicken stock last week. It goes fast because I use it with everything it makes everything taste so much better.

Good for you! I have a deep freeze and I also like to can. I have been working at trying not to go buy groceries but once a month, since we live so far out and I don't like to go to town. Haven't made that happen yet, but that is my goal. I have a good size pantry and I buy extra ,especially sell items, to stock it with. You are an inspiration, Ginny! Have a happy new year! blessings,Kathleen

Kathleen, now that you have retired from the fast food job, you can embroider while you wait for the canning pot time to be up :o)..Nothing like a well stocked larder to make us happy. I'm thinking of paying more attention to coupons too :o) but they have to be something I really use and like.. Happy New Year to you too! ...Ginny

Excuse my ignorance, but if I don't ask I won't know. Is the bag sealing device named Penny a substitute for canning jars? At first I thought the bags were going into the freezer, but it sounds like they can be stored at room temperature like your jars. Nice!

Ladydi, it would be ignorance if you didn't ask!
No babe, Penny isn't a substitute , you can't leave the food out in room temperature (except country ham). The purpose of penny is to remove the air and water out of the bag..it seals it tight and also extracts liquid as it seals , giving it a good tight seal so that in the freezer it doesn't get that frost and ice on the food preventing spoilage. it's a great gadget to have.I'm blessed. Miss Ginny I get tired some days just reading your blog! I'd have never thought of freezing potatoes. But I will from now on. Wishing you and Mr. Cecil a happy, healthy and prosperous new year.

Melodye, thanks for the good wishes for the New Year and the same to you and yours...
There are many ways to do things to make it better for ourselves. Sometimes (most times) you have to put in a little effort to get the benifits, and this time it was well worth it for me...Cecil has eaten up most of the French Fries already :o( I did them the same way , only I sprayed a little Pam over them in the pan put them in the oven until near done ..waited for them to cool ..then "Penny" and I bagged them up for the freezer...Ginny
