Happy Thanksgiving Wishes,& Recipe curtesy of Mr. H. fellow blogger

Wishing you all a Blessed Thanksgiving Day, above  is a "Carrot Cake" my recipe is from an Old Cook book!  Below is a recipe curtesy from a fellow blogger  Mr. H.

Orange Pecan Sweet Potatoes with cranberries -
Ingredients:
4 large sweet potatoes, peeled, chunked and cooked
1/2 cup chopped pecans, toasted
1/2 cup brown sugar
1/2 cup chopped raw cranberries
2 tablespoon Corn Starch
1 cup orange juice
2+ tablespoons butter
1 teaspoon vanilla extract
Directions:
Lightly butter a 3 quart baking dish and add sweet potatoes and pecans.
Combine brown sugar and corn starch in a small saucepan. Gradually add orange juice, whisking to blend.
Cook over high heat, stirring constantly, until mixture boils. Reduce heat and simmer for 2 to 3 minutes.  Remove from heat; add butter and vanilla. Pour over sweet potatoes.
Top with cranberries
Bake in preheated 350°F oven for 45 minutes, until edges are browned and bubbly.

Hi Ginny, thanks for posting this recipe. it looks delicious and I'm planning to try it once we're back home. We've been spending the holiday in Norcross & Decatur, GA. Hope yours and Cecil's was lovely!

Hey Beatrice, glad your having a good time, we are gettng a late start here in NC, our festivities may begin today (Friday). My children are all so far away and have to share their time between many. In the
meantime I'm just resting :o) from all the preparations I've already made. Ginny

Well Howdy all well wishers! My Thanksgiving was just fine..company came, ate a plenty and the dishwasher is working hard :o)...There are many things we have to be thankful for I can't even begin to mention, Even being able to take a breath and use it well..Ginny

Thanks Kathleen, it was very rich with all the nuts and rasins etc. I can't have a piece in the evening..I can only have a small thin ( I do mean thin) slice early in the day in order to work off the sugar. ugh! that's no fun. Neither is my sugar count. Ginny
