A Country Ham Breakfast :o)

Do you all know how hard it is to find a whole Country Ham these days?..You would think in NC it would be easy! Not so, these days it seems they are made more readily for Holiday purchases. Somehow we seemed to have missed it at our local stores! In fact, we didn't miss it, they just stopped selling them, seems that slicing them has become a problem for them :o(  What they prefer to do is sell them already sliced and packaged (with their commercial machines, that my Penny has to contend with). their packages cost ends up being twice as much and you don't get the hock chunks that I like to use in a pot of beans or whatever else I like to season with them, they sell them separate, that gives them a triple profit, I tell you, I need to have a Farm. 
In the meantime I'll have to go along with the program. I guess you know your looking at some grits, sliced ham ( I was going to use those slices for seasoning , but they look so good, breakfast was a better idea :o), notice those little pieces of ham fat that was hard fried , I love those pieces , Cecil could care less for them :o)...one fried egg each is enough, this will carry us pass lunch into an early dinner, maybe my B/S will be lower  again tomorrow, that's what we did yesterday...

Oh my goodness, sorry I missed that wonderful breakfast! Cecil don't know what he's missing, those little strips of crispy fried fat are yummy. I still love slices of salt pork fried crisp after soaking to get out some of the salt. We had breakfast for supper last night, grits,eggs, bacon and homemade biscuits. I had plum jam but hubby wanted fig preserves with his biscuits. What's for supper Ginny!

Mama bug, I've got chicken wings and 2 breasts un-thawing. I'm not sure what I'll do with it..I have in mind some spaghetti with a chicken gravy and using the breast for chicken salad (lunch tomorrow).Then again, I might change that intirely when I get back into the kitchen :o). I've been watching "Victorian farm" on the internet it has held me captive for two days.. Look it up you might like it too...Ginny

wow! oh you dont need a farm, Ginny, you just need to live closer to me! we got our hams back today. i'll post pix tomorrow. they are ham-tastic! and hee hee i'm gonna watch more of the Farm series tonite. i see you've been watching too.

Ohiofarmgirl, We are going to eat ham like it's going out of style or until we get gorged on it :o).
Yes, I've been watching the farm series and enjoying it eminsly, it makes me want to farm even with the work being "constant". Every time I see the chickens I start to scheme "how can I do that". A move would be tough, even though we are older, we are in better shape than many..only thing I'd have to get my butt in gear early to feed my chickens..and that's the challange.


6512...Don't you like grits too?, Well I could always make some Homefries :o) especially with the bargain potatoes I have in the freezer..with some onions, peppers, garlic and other seasoning, I'd have to lock the door next time you came (if you ever left :o).Ginny

You know I have never tried grits, I don't even know what they are...I will have to remedy that some time soon.

Mr. H. What! you never tried grits??? I guarante once you try them you won't ever be without them :o).. A friend of mine tried them and got fancier with them than I do , she adds a raw egg to them and the hot grits cooks it...sometime I add cheese, or I make chicken livers and onions with a gravy for breakfast with them.
Grits are nothing but ground Corn, just not as fine as corn meal that you make corn bread with. Find it on the grocery shelf near the cereals :o)
